Roll Your Own Candy Bars

Those of us in the baby boom generation probably remember the candy of the 1950’s with a good deal of nostalgia. Some can still be gotten at the grocery store, some cannot. For the stuff that you can’t get there are a couple of options. First off, most of the stuff is still made, but just not necessarily distributed in your area. Chunky comes to mind for my area. The other favorite of mine was the Reece’s Peanut Butter Cup. That you can still get around here. You can find stuff online from nostalgia candy and/or grocery vendors. Two drawbacks: shipping and it can melt if you order in hot weather. The other option is to make your own. I will give you two here:

Chunky Bars

1 box semi-sweet chocolate (8 oz.)
75 g raisins (1/2 cup)
75 g cashew nut pieces (1/2 cup)

Melt the chocolate in a double boiler, mix in the raisins and nuts. Pour into a square chocolate mold if you’ve got one, otherwise use muffin papers in a muffin tin. Put it into the refrigerator until it is good and firm. Even better – use half cashews and half brazil nuts if you can find them. That’s the original mix.

Reece’s Peanut Butter Cup

227 g milk chocolate pieces (8 oz)
250 g creamy peanut butter (1 cup)
75 g honey (5 Tbs)
22 g light corn syrup (1-1/2 Tbs)
30 g powdered sugar (1/4 cup)

You will probably not find chunk milk chocolate, so use the milk chocolate drops made for cookies. They work fine. Melt the chocolate in a double boiler.

Mix up the rest of the ingredients. When the chocolate is liquid paint the bottom and sides of a plastic cup form if you have one. If you don’t you can use a muffin tin and liners. Same deal – with a spoon or whatever coat the bottom and sides. Pop the stuff into the freezer and it will set in about 10 minutes. You should have about 1/3 of the chocolate still left in the double boiler. Keep just enough heat under it to keep it liquid.

While the chocolate sets roll the peanut butter mix into balls large enough to fill the cups and set aside. When the chocolate has firmed press the balls into the cups and flatten a bit. Spoon the rest of the chocolate over the top of the cups to cover the mix and reach the chocolate on the sides. Set the whole thing in the refrigerator (not freezer). Pop them out when you want to indulge.

Discussion: You can get Chunky and Peanut butter Cups from the nostalgia stores for about $25.00 for 5 pounds. This will vary a buck or two either way but in 2010 dollars does include shipping. So – you must decide which way to jump. It is a bit more fun to roll your own and you can vary the ingredients to suit your own taste. But it is not significantly cheaper and you will never get the exact taste as the real deal.
